Three Alternative Lunch Ideas

2 hard-boiled eggs or 6 egg whites

Eat with: Slice of whole wheat bread, 1/4 avocado, 6 cherry tomatoes, baby carrots can sub bread for 6 Triscuits or Mary’s Gone Crackers for gluten free choice.

Black Bean Tacos

2 small  corn tortillas, 1/2 cup black beans, 2 tablespoons jarred salsa, 1 tablespoon store-bought guacamole and assemble just before eating. Add a small garden salad.

Tuna salad and Pita Plate

  •  3 oz can of tuna mixed with celery, onion (if you like), and up to ½ TBS of olive oil
  • 1/2 whole-wheat pita (cut into triangles), 1/2 cup mixed grilled or roasted vegetables
